Medium-sized pot for boiling cauliflower and optional pasta
Steamer if steaming cauliflower instead of boiling
Large saucepan for making the cheese sauce
Whisk to mix the sauce without lumps
Large bowl to combine cauliflower and cheese sauce
Baking dish 9x13 inch recommended for even baking
Spatula or large spoon for mixing and spreading the mixture
Oven to bake the final dish
- 1 medium head of cauliflower, cut into small florets
- 8 oz pasta optional, for a heartier dish
- 2 Tablespoon butter
- 2 Tablespoon all-purpose flour or almond flour for gluten-free
- 2 cups Milk whole or unsweetened almond milk
- 2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1 Teaspoon garlic powder
- 1/2 Teaspoon onion powder
- 1/2 Teaspoon smoked paprika
- Salt and black pepper to taste
- 1/2 cup breadcrumbs or crushed pork rinds for keto
- Chopped fresh parsley or green onions optional, for garnish
Cook the Pasta (Optional)
Make the Cheese Sauce
Melt 2 tablespoons of butter in a large saucepan over medium heat.
Whisk in 2 tablespoons of flour and cook for 1-2 minutes. Gradually add 2 cups of milk while whisking to avoid lumps. Simmer until thickened, about 5 minutes.
Reduce heat to low, add the cheeses (cheddar, Parmesan, mozzarella), and stir until smooth. Add garlic powder, onion powder, smoked paprika, salt, and pepper to taste.
Combine Cauliflower and Sauce
- For extra creaminess, add ¼ cup of cream cheese to the sauce.
- To make it spicier, add a pinch of cayenne pepper.
