Equipment

  • Medium-sized pot for boiling cauliflower and optional pasta
  • Steamer if steaming cauliflower instead of boiling
  • Large saucepan for making the cheese sauce
  • Whisk to mix the sauce without lumps
  • Large bowl to combine cauliflower and cheese sauce
  • Baking dish 9x13 inch recommended for even baking
  • Spatula or large spoon for mixing and spreading the mixture
  • Oven to bake the final dish

Ingredients
  

  • 1 medium head of cauliflower, cut into small florets
  • 8 oz pasta optional, for a heartier dish
  • 2 Tablespoon butter
  • 2 Tablespoon all-purpose flour or almond flour for gluten-free
  • 2 cups Milk whole or unsweetened almond milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 Teaspoon garlic powder
  • 1/2 Teaspoon onion powder
  • 1/2 Teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup breadcrumbs or crushed pork rinds for keto
  • Chopped fresh parsley or green onions optional, for garnish

Instructions
 

Prepare the Cauliflower

  • Wash and cut the cauliflower into small florets. Boil or steam for 8-10 minutes until tender but not mushy. Drain and set aside.

Cook the Pasta (Optional)

  • If adding pasta, cook 8 ounces according to package instructions. Drain and set aside.

Make the Cheese Sauce

  • Melt 2 tablespoons of butter in a large saucepan over medium heat.
  • Whisk in 2 tablespoons of flour and cook for 1-2 minutes. Gradually add 2 cups of milk while whisking to avoid lumps. Simmer until thickened, about 5 minutes.
  • Reduce heat to low, add the cheeses (cheddar, Parmesan, mozzarella), and stir until smooth. Add garlic powder, onion powder, smoked paprika, salt, and pepper to taste.

Combine Cauliflower and Sauce

  • Place cooked cauliflower florets in a large bowl. Pour the cheese sauce over them and gently mix to coat. Add pasta if using and toss to combine.

Bake for a Crispy Top

  • Preheat oven to 375°F (190°C). Transfer the mixture to a greased baking dish. Sprinkle breadcrumbs or crushed pork rinds on top.
  • Bake for 15-20 minutes until golden and bubbly.

Garnish and Serve

  • Let the dish cool for 5 minutes. Garnish with parsley or green onions and serve warm.

Notes

  • For extra creaminess, add ¼ cup of cream cheese to the sauce.
  • To make it spicier, add a pinch of cayenne pepper.
